She liked every member, but admired Miyawaki Sakura the most.
- She was a child theater actress. She appeared in musicals for the Shiki Theater company including "Dreaming" in 2009 and "The Lion King" (as Young Nala) in 2012.
- She was inspired to audition for AKB48 after learning that Miyawaki Sakura, who she admired, had also played Young Nala in the past.
- She also co-starred in the musical "Maria to Midori no Princess (マリアと緑のプリンセス)" shortly before debuting as an AKB48 member alongside Iwata Karen. Karen played the leading role "Maria" and Mizuki played "Eliza junior".
- She is a fan of Team 8.
- She says her strong point is her good posture, while her weak point is her shyness.
- She is indecisive and takes a long time to decide on her lunch, clothes, and other things.
- She has been told that the kanji of her name (瑞葵) has a lucky number of strokes.
- She noticed that the first and last kanji of her full name create the word "wasabi" (山葵) when put together. On AKB48 Sayonara Mouri-san she said this means she has a special connection to wasabi, and she took a bite from a raw wasabi root during an episode to show that "her and wasabi could get along". She spat it out soon after.
- According to Asai Nanami, Mizuki has exceptional endurance. When learning the dance to Moto Kare desu she would dance for 30 minutes straight, even though other members would take breaks every 5-10 minutes.
- In Episode 16 of AKB48 Sayonara Mouri-san she revealed that she can instantaneously remove all consonants from a word to say the vowel sounds only. For example, when given the words Minegishi Minami she answered Ieii Iai".
- She likes wearing dresses rather than skirts or pants, and also likes white denim.
- She loves ribbons. The costumes for her center song, Shitsuren, Arigatou, feature many ribbons because of this.
- She likes magical girl anime and wizards. She wore an Ojamajo Doremi inspired costume for her solo concert AKB48 Yamauchi Mizuki Solo Concert 〜"MY" Revolution〜.
- Her solo concert also featured a themed story. In the story, Mizuki played a wizard's apprentice named Zukkii who hid her identity and became a member of AKB48. She used the magic of the fans to fly in the sky, but used too much magic and fell into the sea. Song like Kaiyuugyo no Capacity and ALIVE were meant to show her struggle. Then, the master of wizards (played by Taguchi Manaka) appeared to encourage her. Zukkii was then able to perform once more, not with magic, but with her own abilities and charms.
- When she wakes up in the morning, she always gargles before drinking hot water. She then makes sure to apply face moisturizer.
- At night she always drinks a glass of water before bed.
- On days off she enjoys relaxing at home, shopping, or visiting restaurants with her mother. When relaxing at home she likes playing with her younger sister, watching DVDs, talking to her family, and baking sweets.
- She is good at washing dishes and cleaning the bathtub, but bad at cooking.

- She loves eating, but is careful to avoid sweets and fried foods.
